My favorite dessert to make for Christmas is Cherry Cheesecake. Nate absolutely loves it and it feels like an extra gift to him when we have it. I have made a million different cheesecake recipes. I have made recipes with many additional ingredients and steps but this year came back to my basic one and decided it is our favorite. It is simple and unfailingly delicious.
16 oz cream cheese softened
1/2/ C sugar
1/2 tsp vanilla
2 eggs
Beat softened cream cheese, sugar, and vanilla until blended. Add eggs: just beat quickly until blended. Pour into a crust (graham cracker is our preferred but we also use GF cookie crust as well). Bake 40 mins at 325 degrees. Don't overcook it. Cook until the center is almost set but still shows some movement. It will jiggle a bit! Cool. Refrigerate at least 3 hrs. Add fruit to the top.
